Tandoori-Style Roasted Vegetables

  • 2 O'Henry sweet potatoes, peeled and diced
  • 2 summer squash
  • 2 carrots, peeled and chopped
  • 1 medium Walla Walla onion, coarsely chopped
  • 1 medium zucchini, diced
  • ½ c. olive oil
  • 3 tbsp. hot curry powder
  • 1 tbsp. garlic powder
  • 1 tbsp. Kosher salt
  • 2 tbsp. ground cumin
  • 1 tsp. coriander


Pre-heat oven to 400°F.

Toss all ingredients together in large bowl. Spread evenly on baking sheet in one layer. Roast until tender and golden, about 30-40 minutes.
