Tandoori-Style Roasted VegetablesServes 4
- 2 O'Henry sweet potatoes, peeled and diced
- 2 summer squash
- 2 carrots, peeled and chopped
- 1 medium Walla Walla onion, coarsely chopped
- 1 medium zucchini, diced
- ½ c. olive oil
- 3 tbsp. hot curry powder
- 1 tbsp. garlic powder
- 1 tbsp. Kosher salt
- 2 tbsp. ground cumin
- 1 tsp. coriander
Pre-heat oven to 400°F.
Toss all ingredients together in large bowl. Spread evenly on baking sheet in one layer. Roast until tender and golden, about 30-40 minutes.
