We love Red Russian kale both as a baby leaf, and harvested later at full maturity, which allows for an extended harvest period. Its sweet flavor is particularly pronounced as a baby leaf, but that sweetness remains even at full maturity. Its long stems are reddish-purple with flat, toothed, dark green leaves, and is surprisingly tender. Perfect for an ornamental garden you can snack on, this kale is cold-tolerant and even improves in flavor in the fall. Russian Red prefers rich, sandy, well-drained soil in full sunlight. 25 days to maturity for baby kale, and 50 days to maturity for fully grown kale.
