Ingredients
- 2 c. Dry quinoa
- 4 c. Water
- Juice from 3 lemons
- 1/4 c. Olive oil
- 2 tsp. kosher salt
- 1 c. scallions, mincedv
- 1 c. fresh mint leaves, chopped
- 1 c. fresh Italian parsley, chopped
- 1 cucumber, peeled and diced
- 2 c. Cherry tomatoes, quartered
- 1 tsp. fresh black cracked pepper
Directions
Boil water in medium saucepan. Add quinoa, lower heat and simmer until just translucent, about 15 minutes. Transfer to large mixing bowl. Add remaining ingredients. Cover and refrigerate until ready to serve. Garnish with parsley.
