Product Description

Prosperosa is an attractive Italian heirloom eggplant. However, unlike other long, narrow varieties, each Prosperosa fruit has a pleated, cream-colored top and a squat body--almost like a small pumpkin! This variety grows 4-5" eggplants that are meaty with a mild flavor. Use in soups and stews, or blend with tahini and olive oil for baba ghanouj. Its beautiful purple color comes from anthocyanins, a naturally occurring pigment that provides protection from oxidative damage to the eggplant's cellular structures. Prosperosa is a deliciously, healthy vegetable; it's high in dietary fiber, folate, vitamins B3 and B6, magnesium, and potassium. 75 days to maturity.

  • Fruit: Attractive fruit with a satiny, dark purple skin, and white, mild flesh. Large, rounded fruit is pleated, with hints of cream near the stem.
