Potatoes



POTATOES

Have long been associated with disease prevention. This is due to the large quantities of vitamin C, which is the primary water-soluble antioxidant in the body. This is a key component to fight against damage to cellular structures, including DNA. Potatoes also contain high concentrations of vitamin B6, promoting a healthy heart and nervous system. Most of these beneficial properties of potatoes are found in the skin.

SWEET POTATOES

Are loaded with a number of nutrients that act as antioxidants. Concentrated in beta-carotene, they are also an excellent source of vitamins A and C. Other minerals, such as copper and manganese, are also found in sweet potatoes. These minerals are known to be cofactors of superoxide dismutase, one of the most powerful antioxidant enzymes.
