New Zealand isn't a true spinach, but it's just as healthy, with thick, fleshy leaves that are chock full of vitamin C. Plus, it will grow in the heat of summer when traditional spinach won't! Plant it in sandy, well-drained soil in full sun to partial shade. You'll be amazed at the results and the unique, pointed leaves. New Zealand doesn't bolt in the heat, and actually performs best in the hottest part of summer. Unlike other spinaches, it won't turn bitter in the heat. In many areas and in our research garden, New Zealand often perennializes, returning for several years. 60 days to maturity. Flavor and texture is comparable to spinach, can be eaten raw in salads, sauted or cooked into recipes
