Jicama

This root vegetable is gaining a following-thanks to its low calories, crunchy texture, high fiber content and versatility. Jicama, commonly called the Mexican turnip, has flat, brown tubers that resemble turnips and a texture that's similar to a Jerusalem artichoke. When eaten raw, it adds a crunch to veggie trays, salads, slaws, salsas and tacos. The tubers can also be seasoned and fried much like French fries. The plants can be grown in containers and on a trellis. Tubers can reach 1-6 pounds. 130-150 days to maturity.
