Product Description

The name is deceptive; these Jerusalem Artichokes don't look like artichokes at all! Instead, they're tubers that look like a cross between a potato and a ginger root. They have a crispy texture like a water chestnut, but become soft and nutty when baked or roasted. They're a great substitute for potatoes, especially since they're packed with nutrients! Plant these unique gems in your garden once, and you'll have a steady supply of edible tubers for years to come! Pest-free and adaptable to most growing conditions, Jerusalem Artichokes prefer deeply worked, rich, well-drained soil in full sunlight. As a member of the sunflower family, the plant will grow between 6-9' tall. Dig tubers in fall after the foliage has died back--but allow some to remain for next year. Tubers can be stored in the refrigerator for several weeks. Alternately, leave tubers in the ground and dig as needed (as long as the ground isn't frozen). Eat raw, baked, boiled, fried or pickled. Contains free glutamine and is very high in free amino acids, nutritional points of considerable importance. Yellow blooms appear in late summer. 4+ months to maturity.
