This hardy perennial will produce year after year of maintenance-free, high yields of this distinctive, delicious root. The grated roots have a delightful, pungent tang that you can enjoy in sandwiches, with sushi, or mixed into hummus and guacamole. You could even try your hand at making your own horseradish mustard! Horseradish is high in vitamin C, and if your sinuses are congested, a bit of horseradish with your meal can help clear them right up. Plant in loose, rich, moist loamy soil in full sunlight. It's disease resistant and cold hardy, too. In fact, cool soil promotes the formation of compounds that give horseradish roots their pungency, so it's best to harvest horseradish in fall, winter, and early spring. Horseradish should be grown near the outer edge of the garden in a permanent patch. Be sure to replant some roots after digging to ensure that your plants continue to grow. Zones 3-9.
