COLLARDS

Are an excellent source of dietary fiber and contain the largest concentrations of sulfur compounds. These compounds, such as glucosinolates and the methyl cysteine sulfoxides increase the liver's ability to produce enzymes that combat toxic substances, and appear to reduce the risks of many cancers. Also an excellent source of phytonutrient antioxidants lutein and zeaxanthin, collards can help reduce the risk of cataracts and macular degeneration. This leafy green is also one of the best plant-based sources of calcium, helping to promote bone health.

SWISS CHARD

Is one of the most nutritious vegetables around-only spinach has a higher nutrient rating! Because of the high concentration of carotenoids (beta-carotene, lutein and zeaxanthin) and flavonoid phytonutrients (including anthocyanins), it is a powerful antioxidant that promotes digestive, bone, heart and vision health.
