Product Description

Eclipse eggplants are a breeze to grow! In addition to producing a high yield, these plants are drought, disease and heat tolerant. Each eggplant will grow up to 8" long, with a glossy, deeply purple, almost black exterior. They have a sweet, mild white flesh, which makes them our favorite variety for eggplant Parmesan. They're also delicious simmered with other vegetables like tomatoes and bell peppers, or skewered for grilling with pearl onions and zucchini. The seeds inside will tell you whether or not Eclipse is ripe--fruits with no visible seeds are premature, while dark, hard seeds indicate an overripe eggplant. 65 days to maturity.

  • Fruit: 8 inch teardrop shaped fruit, deep glossy purple.
  • Soil Preference: Well-drained, enriched soil.
