Basic Chicken Broth

Ingredients

  • 1 tbsp vegetable oil
  • 2 pounds chicken parts
  • 1 whole chicken
  • 6 medium carrots, coarsely chopped
  • 4 celery stalks, coarsely chopped
  • 1 large Yellow Rock onion, quartered
  • 1 tbsp whole black peppercorns
  • ½ bunch Italian parsley

Directions

In a large stockpot, heat oil over high. Add chicken parts and brown on all sides, about 15 minutes. Remove fat. Add remaining ingredients and enough cold water to cover by ½ inch. Bring to a boil. Reduce and simmer until chicken is cooked through, about 45 minutes. Skim fat off the top. Transfer chicken to baking sheet and allow to cool. Meanwhile, pour broth into large bowl, straining out solid ingredients using cheesecloth or a paper towel lined strainer. Using two forks, shred chicken into bite sized pieces. Discard skin and bones. Save chicken.
