Squash and pumpkins are available in an array of colors, shapes and sizes. Their flavors range from mild to nutty. Use pureed for baking, eat their edible flowers and seeds, or decorate your home for the fall season.
Summer squash: With a little imagination you'll enjoy using up the bounty of summer squash, and you may even be reluctant to share with your neighbors! Grill, roast, sauté, use as a noodle replacement, or bake into yummy breads, muffins and cakes. Summer squash is rich in magnesium and full of antioxidants which help maintain optimal weight and aid in heart health.
Winter squash: Colorful and fun in various shapes and sizes, decorate your home or cut in half to bake. Winter squash is also a great addition to salads and pastas. Use pureed squash in pies, muffins, breads and cookies. For best results, winter squash should be moved to a warm, dry area 80-90°F to cure for 10-14 days prior to storing in a cool, well ventilated area about 50-60°F (basements are an ideal location) and kept for enjoying all winter long. Winter squash contains carotenoid phytonutrients including alpha and beta carotene, which promote respiratory health and function as anti-inflammatory agents.
Pumpkin: Great for fall decorations and so much fun to grow--when pumpkins are still small, they grow so quickly you can almost see them getting bigger! The perfect addition to children's gardens, most people know about the flavorful flesh, but did you know the flowers are also edible? Try them breaded in flour and lightly sautéed in butter for a delicious snack. After making jack-o-lanterns, sauté the seeds in a little olive oil and sea salt for more snacking fun!
Squash vine borer is a common problem, but can be controlled by starting a spray program with Bulls-Eye™ Bioinsecticide when vines start to run.
