Spinach is great in salads, soups and smoothies, or added to sandwiches! You can also use large leaves in place of bread to make a healthy wrap. An excellent source of iron (rivalling some meats), spinach is rich in anti-cancer antioxidants. Preferring cooler growing conditions, it performs best in the spring and fall garden.
Eat just half a cup of raw spinach and it will count as 1 of the 5 servings of fruits and vegetables you should eat in a day.
