Carrots

Eat fresh from the garden, slice, dice or shred into slaws, salads, sandwiches or pastas. Carrots can even be pureed and mixed into many dishes for added nutrition! Additionally, carrots can be roasted, baked, sautéed into stir-fries and mixed into soups or casseroles. Carrots store well in the fridge or a cool, dark area. Preferring cooler growing conditions, carrots perform best in the spring and fall garden—late fall and winter harvested carrots are notoriously sweet. Mom wasn't lying, either--carrots really do support vision health and boost your immune system as they are full of vitamin A and antioxidants.

Fun Fact

By covering up with about a foot of leaf mulch, carrots can be left underground all winter long and harvested in spring or throughout winter. Winter-harvested carrots are usually very sweet!
