Cabbage
When we talk about our favorite cold weather vegetables, cabbage always springs to top of mind. Cabbage is easy to grow, easy to use in cooking and to enjoy fresh, and is a great way to fill in the garden before and after the warm season. For spring cabbage, seeds can be started indoors in late winter or early spring and transplanted outdoors when the weather has warmed up and the threat of frost has passed. Spring cabbage should be planted early enough so that it reaches maturity before the heat of summer sets in. For fall cabbage, seeds can be started indoors in mid-summer and transplanted outdoors in late summer or early fall. Fall cabbage can be harvested in the cooler months of fall or even into early winter in some areas.
