Veggie Hummus

Serves 4


  • 1 O'Henry sweet potato, peeled and diced
  • 2 zucchinis, chopped
  • 1 red bell pepper, chopped
  • 1 can Great Northern beans (or Garbanzo beans if preferred)
  • 1/3 c. fresh lemon juice
  • ¼ c. tahini
  • 2 tbsp. olive oil
  • 2 tsp. ground cumin
  • ½ tsp. cayenne pepper
  • 1 garlic clove
  • Kosher salt and pepper
  • Serve with assorted vegetables for dipping


Set a steamer basket in a large pot. Fill with enough water to reach bottom of basket. Add potatoes, cover and simmer until tender, about 10 to 12 minutes. Transfer to food processor or blender. Add remaining ingredients to food processor and puree until smooth. Add water if hummus is too thick. Allow to cool to room temperature before serving.
