Pickled Onions


  • 1 cup water
  • 1/2 cup apple cider vinegar
  • 1 Tbsp sugar
  • 1 1/2 tsp kosher salt
  • 1/2 tsp coriander seed
  • 1 large onion thinly sliced, or several small onion bulbs from the tops of walking onions.


Mix the first five ingredients. Place onions in a jar and pour and pour the vinegar mixture over until it is well covered. Allow to sit at least one hour before using, or place in the refrigerator for later use. Top your soups, salads and sandwiches with these.
